Take a traditional Thai chicken curry as an example. Heating the coconut milk at different times or at different temperature settings results in varying tastes that can make or break the dish.

"A person may cook western food well by following recipe books strictly, but it doesn't work that way for Thai food," Mrs Wandee says.

"The best way to go about it is to keep practising and learning from your mistakes along the way."

Therefore, the school teaches the fundamentals of Thai cuisine to its students. When cooking a curry, students have to make the chili paste themselves, instead of using packet mixes.

Even when preparing the chili paste, using different parts of the lemongrass plant will generate different tastes.

Another area that distinguishes authentic Thai cuisine from that of other countries is decoration, so the school offers comprehensive training in food crafting, including flower arranging.
