Authenticity on the Menu

The school has approval from the Education Ministry to stage courses and exams for students wanting to work as chefs overseas. Certificates given by the school can be used to apply for licences from the Labour Ministry.

"Eighty percent of our students go to work overseas. Some students want to work part-time in Thai restaurants in between studying abroad," she says.

The school is based in a shop house on Pradiphat Road, with the second floor modified as classroom kitchens.

The length of a course varies according to the reason for study. Short courses are available, but 300 hours of training are mandatory for those who want to gain a certificate.

Mrs Wandee holds several qualifications in home economics. But her interest in Thai cooking was inspired by poetry books, which depicted the culinary world of the royal courts.

She has written several books on food, including one on Thai cuisine in literature. She is also a teacher at the Women's College in the Court at Phra Tamnak Suan Kularb School for Adults, a school for Thai craftsmanship under the patronage of Her Royal Highness Princess Maha Chakri Sirindhorn.
